Sales of organic meat have increased more than 150 percent since 2002. This increase was accelerated after the first cases of bovine spongiform encephalopathy (BSE) were reported in the US and Canadian cattle in 2003. Demand is greater than supply and the Organic Monitor found this undersupply to have a dampening effect on market growth rates. As a result the US market for organic meats to become highly import-dependent with organic meats imported from Latin America, Australasia, and Canada. Imports are mostly in the organic beef and pork markets, where domestic producers have been reluctant to go organic due to high production costs, lack of certified slaughterhouses and meat processing plants, and inadequate distribution infrastructure.
